Caprese Frittata Recipe

Frittatas are so versatile—you can sub in whatever fixings you happen to have on hand, so they’re a perfect way to repurpose leftovers. Serve at room temperature or hot off the stove, for breakfast, lunch or dinner—the opportunities are endless!

2 eggs

1/8 cup milk

1/8 cup shredded mozzarella

¼ cup cherry tomatoes, cut in half lengthwise

½ cup fresh basil


1.   Combine eggs and milk in a small bowl. Add the mozzarella, half of the tomatoes, and half of the basil to egg mixture.

2.   Heat a small nonstick pan over medium-low heat and lightly spray with cooking spray. Add the egg mixture and cook until almost set , about 5 minutes.

3.   Carefully flip and cook about 30 seconds more, until fully set. Serve warm or at room temp over a bed of basil and tomatoes.
