The classic Italian favorite, spicy Italian sausages served with soft and melty caramelized onions and red bell peppers are topped with a flavorful house marinara and topped with fresh basil. Protein, flavor, and veggies all in one crowd-pleasing dish!

5 tablespoons olive oil, divided
2 garlic cloves, minced
1 28-oz can crushed San Marzano tomatoes
Salt, to taste
2 sweet onions, sliced into ¼ inch slices
12 Italian sausages
2 red bell peppers, sliced into ¼ inch slices
Fresh basil, for garnish
- To make the marinara sauce, heat 2 tablespoons of olive oil in a saucepan over medium. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the tomatoes and bring to a simmer. Cook for up to one hour, until the flavor, is deep and robust. Taste and season with salt.
- Heat 2 more tablespoons olive oil in a large skillet. When the oil shimmers, add the sliced onions, peppers, and a big pinch of salt and reduce the heat to medium-low. Cook, stirring occasionally to prevent sticking, until the vegetables are very soft, about 15 minutes.
- Meanwhile, heat the remaining 1 tablespoon of olive oil in a large skillet with a lid. When hot, add the sausages and sear on all sides, turning regularly. When the sausages are nicely browned, reduce heat to medium-low. Add ½ cup of water to the skillet, cover, and cook for 10-12 minutes or until the internal temperature reaches 160°F.
- Serve the sausages topped with caramelized onions, peppers, marinara and sprinkled with fresh basil.
