Ingredients

1 avocado, halved and pitted

2 medium eggs (optional)

2 oz. seasoned grilled steak

2 tablespoons all-natural bacon bits

3 oz shredded cheese (Monterey Jack and/or Cheddar)

2 oz baby spinach

Instructions

  1. Preheat oven to 350.
  2. Place avocado halves skin-side down in a shallow baking dish. If using eggs, carefully crack an egg into each avocado half (Note: you may need to scoop out some additional avocado flesh so the egg doesn’t overflow)
  3. Top each half with grilled steak, bacon bits, and cheese. Bake until eggs are set and cheese is melted and beginning to brown, about 20 minutes.
  4. Serve over a bed of baby spinach.
