This salad is less of an appetizer and more of a healthy, filling breakfast on a lighter side.
Boiled eggs with the crunch of leafy vegetables make this salad one of my favorite ones to munch on.

- 6 eggs
- 2 celery stalks
- 2 green onion stalks
- 1 green pepper
- 1 tsp mustard
- 2/3 cup mayonnaise
- Hard boil eggs and remove to a bowl
- Chop green pepper, onions and celery
- In a bowl mix all the ingredients and serve
